Move SS apps from 2.72 to 3.x?
I have a SS application that runs fine under SS 2.72, both on Windows and Linux, but when I export it from 2.72 and import under 3.x, the extractor functions fail miserably.
Perhaps there is/was some "readme" that I've missed? Or, some undocumented feature?

I don't believe the changes made between 2.72 and 3.x should have affected how your extractor patterns behave. One idea that comes to mind would be to check if you were tidying your HTML on the previous version and whether or not the tidying setting carried over when you upgraded.
